Giggling Squid Thai restaurant proposed for Bridge street

A planning application has been submitted for 30 Bridge Street (formerly Tessuti) by Giggling Squid Thai restaurant/tapas.

The expanding restaurant chain which has branches in nearby Shrewsbury and Alderley Edge was founded over 20 years ago by husband and wife team Andy and Pranee. In 2002 the couple devised their first menu with the aim of bringing a “true Thai mealtime buzz” to the UK. The restaurants name comes from their nickname for one of their children. Co founder Pranee grew up on the banks of the Mekong with many of the dishes inspired by childhood recipes. Giggling Squid have previously received the Thai Ambassadors award for the best Thai restaurant in the UK.

The plans include internal fitting out for a restaurant and the installation of mechanical plant to roof area. The ground floor will have space for 39 covers in the bar area and an additional 58 in the main dining area. Fulfilling the long term goal of restoring footfall to the rows, there will also be row access including a seating terrace and space inside for 78 covers. A new kitchen is proposed for the upper first floor and new toilets on the second floor.

A heritage statement submitted by Giggling Squid reveals the history of the building which was originally a town house, before becoming a public house and shop.

If accepted Giggling Squid would join Thai Barn (opened Autumn 2023) as the second Thai restaurant on the street.
