Maray is coming to Chester this winter. The restaurant, which launched in Liverpool in 2014 is known for its bold fusion of Middle Eastern and Parisian small plates and announced their arrival on Instagram with an image of a giant “disco cauliflower”, one of their signature dishes.

Maray has restaurants in Liverpool, and Manchester and has has become synonymous with iconic dishes like its disco cauliflower, mezze spreads, vibrant cocktails, and a lively, communal dining atmosphere .The Northgate opening was praised by Councillor Nathan Pardoe :

The Maray menu offers sharing plates packed with flavours such as whipped goat’s cheese, crispy aubergine with tahini, falafel, lamb shawarma, and that signature disco cauliflower—smothered in harissa, tahini, pomegranate and almonds . Menu innovation extends to thoughtful plant‑forward options—a hallmark of Maray’s mission to blend indulgence with sustainability .The new Chester venue promises the brand’s trademark vibe: a warm, modern space built for group dining, relaxed drinks, and lively conversation. Like its predecessors, this will likely feature a curated cocktail and wine list, inspired by Middle Eastern and Mediterranean producers .
