Vinological is a new wine shop/deli/wine bar and tasting room which will be soon be joining the Chester market revolution.  The new business will be taking over a large unit at the rear of the market which was formerly Intuneative (now moved to the Forum) and before that the long serving hardware shop.

Owner Simon has worked in the Chester wine scene for ten years.

“I decided to take the opportunity to do something of my own . Chester market has been on my radar for a couple of years and its really developed  a cool interesting vibe. Its perfect for a wine shop, and it will complement everything else in the market

“We’re going to have a fantastic selection of wine. I want to do things a little bit differently to traditional wine merchants , so we’re going to have a lot of Eastern European wine, vegan wine will be forefront, and organic wine. Its not unusual for wine to be vegan but it is unusual for wine merchants to promote it. I’m going to try and avoid big brands  and work with small artisan producers. I’m going to offer a small food selection as well. I’m working with The Spanish Hamper, who are Chester based, but everything is imported from Spain, theres a selection of Spanish charcuterie and cheese, some olives and a few other deli items.  ”

Simon says that his new business will offer a relaxed and friendly vibe, reflecting his love of wine, and 80s music. Of the revived market he says: “Its come on  leaps and bounds. Its a huge credit to the market team, but also to the other traders. People like Death by Tacos, Steins, Peak sandwiches. They’ve taken a chance on the market and it can only get better from here. I’m very excited by the new market potential and I’ve been keeping up to date on the plans . My plans are to move to the new market and its very exciting !”

Vinological will be opening later in the summer. In the meantime Simon will be running a pop up wine bar on Friday night as part of the hugely successful “Foodie Friday” offering a choice of seven different wines.
