Verde’s now open in the market

” We felt that the market was missing a Vegan stall” says Amanda Stein, owner of Steins and now Verde’s, the market’s first 100% plant based eatery. Verde’s follows Hypha, Jaunty Goat and Vegan Deva which all opened in 2019 as part of Chester’s vegan dining revolution.

Having established Steins in the summer of 2018 Amanda was keen to expand, having recently converted to veganism herself for health reasons.
“12 months ago I looked into becoming a vegan and I’m really excited about it, we’re having a lot of fun learning about the food. We wanted to build on the success of Steins and we have a good customer base there now, we want to produce tasty quality food for our vegan customers.”

Verdes’s recently opened with a simple launch menu. “We want to learn from our customers” says Amanda. “We do a house burger, we do a sandwich, a stew, we do sides like onion rings , chunky chips and tempura veg. ” For breakfast “Scrambled eggless” on rosemary toast is served. “Its actually made of tofu but it tastes like scrambled eggs. For those vegans that have recently become vegan, and miss certain foods, we thought it would be nice to have this. The burgers are plant based, but people miss burgers! ”

On the popular Friday late nights, Verde’s serve vegan tapas which Amanda hopes will prove a hit with customers. Dishes on offer include zero beef teriyaki and sesame, beer battered fishless goujons and tomato and coconut dahl. “We would welcome any feedback from what customers would like to see on the menu. We are hoping to build on our offer, we’ll be doing a lot of salads in the summer and we are still learning how to cook some of the vegan food as well. I’m enjoying it, cooking new food I’ve never cooked before. The Tapas reflects what we do at Steins and there are more and more people becoming vegan now, they need the same variety that meat eaters have. The tapas menu is a great introduction to vegan food, with small dishes so people can see what its all about! ”

Amanda says she aims to bring both Steins and Verde’s into the new market, with construction expected to begin soon.
